I ordered new pickup rings for my mccarty (it’s a 2000) off the prs website and got the “stop tail” ones but after looking at them compared to my guitar, the bridge ring is taller than the one that’s on the guitar right now. After looking at pics of new Mccartys it looks like they changed the rings. Does anyone know why or if they will work on my guitar?

Are they center holes of the rings you ordered countersunk??
If so your ordered the wrong rings that. These are the rings PRS currenty uses on their McCarty & 594 guitars now, thay are diferent from the original rings on your 2000 McCarty. Your rings should not have a countersunk center hole
PRS still makes the original rings for your guitar, they are referred to as Stoptail Slanted and here are the part and serial numbers for the black ones

Here are the part and serial numbers for the cream ones

I have 101734:002:003:001, I checked the website and I don’t see any with the part number that you put for ivory.

Is the counter sunk center hole the only difference? Would I just have to get different pickup screws?

If memory serves me correctly they were actually not as thick as the rings that you purchased therefore your bridge ring would be the same thickness as your original rings and would not be as tall,, They should be the same exact specs as your original rings.
Unfortunately we do not have any in stock to give you a definite answer but you can contact PRS customer service and they should be able to tell you.

I have a 2008 Korina McCarty and updated it to current hardware. The new Stoptail Rings fit with no issues.

My 2021 and 2022 594 McCartys have slanted rings with no countersunk pickup holes. Only the mounting holes are countersunk.
Sorry, I checked. The pickup holes are countersunk
