Why arent the strings totally straight

Over the nut to the tuning pegs?. It's super close, isn't important, I never see it when playing and my current guitars all have nicely cut nuts. But it looks like that was the PRS intention, but they missed it by a fraction. More an OCD issue for some I suppose.

That said, this is arguably the best looking PRS headstock. Yes..my "SE" guitar will kick your booty! Lol!
 
Because the headstock was originally designed for tuners with locking cams (referred to as “winged”) that added to the diameter/circumference (?) of the tuner shafts.


See? Straight string pull.

Also shown in pic: A lot of guitarists lacked the brain power to actually use the tuners with cams properly.

A brilliant design. A little over-engineered, perhaps. I loved the look, and the straight string pull just on aesthetics. The more recent shafts are easier to use, and certainly work great.

But you're right, lots o' people simply didn't know what the heck to do with them!
 
Drive some pins in there. Gibson/Epi says that’s the way!
