I was wondering the same thing when I found out they were doing The Hobbit in three installments, but so far I haven't been disappointed--the first one was excellent.
I first read The Hobbit and The Lord of the Rings as a teenager back in the mid '60's, and I remember thinking, "Someone's got to make a movie version of this!" I enjoyed the Peter Jackson LOTR movies, even though I didn't like some of the changes in characterizaion (Faramir, anyone?) and plot (no Scouring of the Shire), it looked fabulous--it's a tribute to the descriptive nature of Tolkien's writing that the film looked almost exactly like what I visualized reading the books. I love the fact that the Hobbit movies are going into a lot of detail to tie in with LOTR, as Tolkien wrote The Hobbit long before he wrote LOTR. This might be one of those rare instances wher the movie could be better than the book, which you can't really say about LOTR. And the less said about Ralph Bakshi, the better...
