Refinish an SE

I have plenty of experience with woodworking and finishing, so I was thinking about buying an SE245 and sanding the top veneer to dye it a different color. I've worked with sanding veneers before so obviously it will take a delicate hand not to mess it up. Has anyone done anything like this or attempted a repair on one? How thin do you think the veneer would be?? I want another guitar but it's hard to get excited when you can only get colors you already have.
 
The veneer should be 0.6 or 0.7 mm thick so a very steady hand is needed

Edit. I ill be later this year refinishing my lp copy. Its currently white but once stripped i will be applying a tiger stripe veneer and staining it blue with black stripes.
