Here is the quick response I got to my question:

As a matter of fact the chips were packaged in
Plano, Texas so we are assuming that they were at least American potatoes.
However with the proximity to Mexico it is quite possible that it was made
from Mexican potatoes. On the other hand they were not Southwestern style
chips so I think they probably are good old American chips. We have had
the chip analyzed on a Hewlett Packard 57-10A Dual Column Gas Chromatograph
with Flame Analyzation Dectectors. Weight is.003 grams (or something close
to that). We will ship by FedEx with Insurance.
