Lately (just the past year or so) my new thing to ignore is how I can’t turn italics off if I turn them on in the middle of a post.

The italics is a royal pita on a phone.Never saw this thread, but it did start prior to this newer version of the forum if I recall correctly, so the original problem might be fixed on your end.
For the persistent quotes/replies stuff, I delete what is in the edit window AND I use the drop down left of the "Preview" button in the upper right corner of the edit window and choose "Delete Draft". When I return to that thread, it no longer has the stuff I had been typing previously.
As for italics, it turns on/off fine for me using the menu, but you can also use Ctrl + I on windows (I think Cmd +I is apple equivalent) to turn italics on and off, so that may work for you.
