My famliy and I are doing a 7 day cruise from rome,Italy to several places within Italy, France, and Spain, as well as a few islands.
We will be staying a few days prior to and after the cruise, as well.

I'm wondering if there's any euro specific PRS guitars that I should be on the lookout for while I'm there?
 
Ehh, not really that I can think of. Maybe some random SE’s? Like the maple fretboard Customs or the special run of Bernie’s with 53/10’s.

The EU is a relative hellhole for PRS guitars in comparison to the US. Japan on the other hand....
 
I don't know about special guitars, but after you see the typical tourist sights in Rome, check out the Basilica of San Clemente. It's a 12th century church built on top of a 3rd century Pegan temple, built on top of a 1st century Roman house. Under the church has been excavated and you can explore the dark corridors below.
