At the shop where I hung out in the late 90's, the owner was the luthier. He had his bench set up in a corner of the showroom. He would do the quicker stuff like setups and pickup swaps right there while you waited. Had a lot of great conversations and played some nice gear to pass the time.

I guess that only works if you have have a relatively limited clientele, but it was still way cool and convenient.
 
Oahu has maybe two high end stores. One pushes Gibson, the other PRS. Ironically, the PRS guy is one of the most unorganized, dirty, hippy infested places I've ever been in for a guitar store. You have to step over gear, find a safe path to the little booth where he keeps his PRS stock, and never mind the crowd in there all the time. The Gibson place is island centric with fake palm trees and a do not touch policy.. the place is darn near empty every time I've ever entered...;-)
