You may want to try a chemical strip then. There's one that you can put in a spray bottle (Bix maybe?), though I'd try and keep it localized to the top and mask off the rest. I haven't tried it though so..
Your gonna be kinda limited with how much you can change the color depending on what it already is. Blue, Black Cherry, and any of the darker colors will have a dark base (grey-ish) that's stained first, then covered on a sealer/poly, then the top color is sprayed on after that, and then finally the finish coat of poly. You won't be able to get that base off without eating through that veneer. If you have a burst or something more "natural" then those colors are added over the base yellow and poly layer.
It is possible to sand off the top color but you have to be very careful and especially mindful of the edges and any cutouts (pups, knob holes, etc.).
