Beer Bread

3 c. all‐purpose flour
1/4 c. granulated sugar
1 Tbsp. baking powder
1 tsp. salt
12 oz. beer (lagers & light ambers work well, even the cheap crap)
4 tbsp. butter, melted

Preheat oven to 350°F.

Mix together the flour, sugar, baking powder, and salt. Add the beer and stir until just combined. ("Quick bread" technique--same as pancakes, etc.)

Pour half of the melted butter into the bottom of a loaf pan. Add the batter to the pan, and then top with the remaining melted butter.

Bake 40–50 minutes until light‐golden brown.
 
Here's a simple one, but it's the best tasting KLP I have ever baked! So much better than the "instant" non-baked kind.

Pie is always good.

Rick's Favorite Baked Key Lime Pie

Ingredients:

14 oz (1 can) Eagle Brand sweetened condensed milk
½ cup real lime juice
5 large egg yokes, 6 if small eggs
1 nine inch pie crust, store bought graham cracker or Oreo crust works, or home made
1 pint heavy whipping cream, and sugar for sweetening to taste
1 ½ to 2 teaspoons of vanilla, preferably the paste with seeds in it (Nielsen-Massey or similar)

Directions:

1. Preheat oven to 375 degrees.
2. Combine the first three ingredients, mixing them until well combined.
3. Pour into the pie shell (unbaked, or par baked if home made).
4. Bake for 15 minutes. The center will still have a jiggle to it.
5. Remove to a wire rack or trivet and allow to cool completely.
6. Put whipping cream and vanilla into a bowl and beat with mixer on high speed until it begins to thicken. Once this begins, slowly add a little sugar, no more than a tablespoon at a time, until desired sweetness and stiffness is reached. Don't go too long, or you'll have made butter.
7. Once the pie has completely cooled, spread the whipped cream on top. Serves 8, or can be sliced thinner (but why would you?)

Here's the recipe for the blackened seasoning I use.

3 tbsp smoked paprika
2 tsp onion powder
1.5 tsp sea salt
1 tsp garlic powder
1 tsp black pepper
1 tsp thyme
1 tsp oregano
1 tsp cayenne pepper

Pound chicken breast to even thickness, coat with the seasoning and cook in a very hot cast iron skillet with ghee. It's gonna smoke up your house something fierce, but is so delicious.
 
Homemade bread...

1/2 cup sour cream
1/2 cup milk plus 2 tblsp
1 egg
2 tblsp brown sugar
2tblsp avocado oil
1 tsp salt
1 cup sprouted whole wheat flour
2 1/3 cups whole wheat bread flour
2 tsp fast rise yeast

(optional shredded cheese on top)

I let a bread maker knead the dough. Takes about 1.5 hours including first rise
Then set oven at 350F and place the dough in a greased bread pan.
If choosing cheese topping then spread/press in enough shredded cheese into/onto the top of the dough.
Let it rise until even with the top of the pan.
Place in oven and bake at 350F for 30 mins.

Here's a great, and easy side dish. "Smashed Potatoes".....kind of

Items needed:
Mini potatoes
Olive Oil or Spray
Microwave safe pan
Butter
Salt
Pepper

Place potatoes in microwave safe pan
Coat potatoes with olive oil
Microwave for 3.5 minutes on high
Remove from micro and flatten potatoes with a fork or the back of a spoon
Place a small pat of butter on each of the potatoes
Season, to taste, with salt and pepper
Put pan on grill, over heat, for 20 to 25 minutes.

End result should be crispy on the bottom and soft in the center. Easy, and tasty.

A good dish, I double the sauce recipe, and when I dip the chicken in tempura, a little panko afterwards to give it more crispiness and cooking in canola or vegetable oil. This recipe is simple and my whole family loves it!

Well, it's that time of year where we forage for the bounty of Hen of the Woods (maitake) mushrooms. And when I say bounty, I mean MrsThunder will collect 20-30 POUNDS of the beautiful "dancing mushroom". We consume it in many ways, plus trade with friends for other goodies. Most of it ends up as soup however, and this recipe freezes exceptionally well so we get to slurp up the good stuff year round. You could definitely substitute other wild mushrooms, and we frequently add other varieties depending on what we're finding in the woods.

  • 8 tablespoons (1 stick) butter, room temperature
  • 2 cups sliced celery
  • 1 cup sliced shallots
  • 3/4 cup chopped onion
  • 3 garlic cloves, minced
  • 8-10 cups chopped fresh Hen of the Woods (maitake) mushrooms (about 2+ pounds), half reserved
  • 2 cups sliced shiitake mushrooms, half reserved
  • 1/2 cup dry Hard Cider
  • 1/2 cup dry Sherry
  • 1/4 cup all purpose flour
  • 8 cups chicken stock or canned low-salt chicken broth
  • 1/2 cup whipping cream
  • Salt & Pepper to taste

Melt 6 tablespoons butter in large pot over medium-high heat. Add celery, shallots, onion and garlic and sauté until onion is translucent, about 8 minutes. Add all mushrooms and sauté until beginning to soften, about 4 minutes. Add white wine and Sherry. Boil until liquid is reduced to glaze, about 6 minutes.

Mix remaining 2 tablespoons butter and 1/4 cup flour in small bowl until smooth paste forms. Add flour paste to mushroom mixture in pot; stir until mixture melts and coats vegetables. Gradually mix in stock. Bring to boil, stirring frequently. Reduce heat to medium-low and simmer until mushrooms are tender, stirring often, about 10 minutes. Stir in cream. Season with salt and pepper.

Working in batches, puree soup in blender or processor until smooth. Return soup to pot. (NOTE: we switched to just using a stick blender a few years ago. You want the soup to retain some texture and it saves on cleanup). Add reserved mushrooms, bring to simmer until tender. Ladle soup into bowls and serve with crusty bread.
 
Fried Heart-Attack Sandwich:

1 Can of SPAM (or bo-bo equivalent)
6 Strips of precooked bacon
2 Keto/Organic Wheat Hoagie Rolls
Iceberg Lettuce
Mustard

Step 1 - Cut the SPAM into 4 large pieces
Step 2 - Cook the bacon for 19 seconds
Step 3 - Fry the SPAM until desired browness
Step 4 - Bake the Hoagie Rolls 4 minutes to firm them up
Step 5 - Mustard up the rolls
Step 6 - Add desired amounts of Mustard (or other condiment)
Step 7 - Add lettuce to the roll
Step 8 - Add SPAM to roll
Step 9 - Add Bacon to the top of the SPAM

Enjoy with a side of Takis or Chester's Hot Fries and an ICE COLD soda pop (or beer if you're the beer drinkin' type)

It is YUMTASTC!!!!
