I've been recently trying to get better at my playing, submerging myself into the art of jazz, soul, and fusion. Been looking up some great players including Isaiah Sharkey and Jairus Mozee.

What I'm most curious about is their different styles of playing. Isaiah, inspired by George Benson, has this chordal melody thing going on where for each note in a solo improv, he is playing some type of three (or four) note chord. Amazing how fast this guy plays!

Jairus is just as crazy, and it seems he has very in depth knowledge on Chord runs and scales.

Any insight on learning this type of playing?

I can only suggest one thing. You've heard the expression "Think outside the box". Well looking at what these gifted players are doing, and drawing from my own lick bag of tricks, along with some methods borrowed from some great guitar players, I would tend to say "Start thinking inside the box".
What is the box? For me it's the hand, finger placement where I can run scales, major, minor, whatever, but I'm not really moving my hand a whole lot, except maybe where I have to grab a ninth in order to fall into a decending arpeggio. It's a lot of practice over and over trying to attain the speed (if that's what you're after), but one thing is very important and that's the neccessity of using that unused little finger a lot more.
There's an old joke..."How do I get to Carnegie Hall?" ........ practice ~ practice ~ practice.
Hopefully some other players will chime in here and offer you some help, but what I mentioned above works for me, and I'm 50+ years into the guitar, and still playing, and of course learning....you never stop learning.
Good Luck.

This is a great tool: http://www.musiciansfriend.com/accessories/planet-waves-varigrip-hand-exerciser Resistance adjustable for each finger. I use mine all the time.
