If i've been soldering in new pots then i'll change the caps. I generally prefer Sprague Orange Drops as they're cheap but seem perfectly reliable. 0.022uf seem to work for me in all my guitars.
Not a big fan of spending silly money on caps. The value will make a difference but beyond that I believe (Just my humble opinion) that any other difference is so small as to be negligable in the grand scheme of things. 100v or 400v makes no difference to me as the voltage inside the guitar is so small it's worthless experimenting with volt values.
Direction doesn't matter on a cap unless it's directional. You'll know this as it will have + - markings on the cap. Otherwise just shove it in there!
Sorry to come in with a negative view on this but for me a caps a cap and the most important thing about one is the value.
