Nice one! I owned an EG for a while and it was very Strat-like but with the great PRS tremolo.
Based on the serial number yours is a 1991:
1 = 1991
5 = EG series
1190 = 1190th EG made, which falls in the range of serial numbers of those built in 1991
Take a look at the "EG" section of this...
You can find some serial number info here. MODCAT stickers can be found on some cases, sometimes on the info tag if you have that and also under one of the pickups.

About a year ago I bought a 1997 Custom 22 w/moons & stop tail and it had Dragon I's. So it's likely a 1995 also came stock with the Dragon I's. I think the Dragon II's were introduced around 1998.

If you can solder, the solution is probably to note where each of the wires from the bridge pickup is connected to the switch and swap to where the neck pickup is connected. Do the same for the neck pickup.
Glad you're enjoying them both. I use my NF3s as my 1a and 1b (and 1c and 1d) gigging guitars and they just work.
I've noticed the Phase III tuners can get tight too. If you find a solution please share. I never had that issue with Phase I or IIs.
I did a search for "PRS Rotary" on Reverb and several turn up. A few are less than $100 USD. Here's one as an example:
