Sounds like there out of phase. So the swap the pos/neg from one of the pickups should cure that.

Strange indeed, one last thing to try (doubtful but why not). On a humbucker guitar try lowering the pole screw on the G string and give that a test.

Are your guitars all setup basically the same? Pickup heights (to close to strings) can cause an issues.
