There are a lot of great options, including the aforementioned 594.
I would suggest that the hollowbody (especially with piezo) might be an under-the-radar option here. Amazing cleans and can handle plenty of gain.
I think this is a great change that was necessary to keep the S2 line viable. New S2 instruments will fill their natural niche as full USA PRS guitars that are kept much more affordable than core by reducing the expensive and labor-intensive bling and using a few other tricks (e.g. scarf joints).
They are very versatile guitars. They cover the territory that most guitars with two humbuckers can, and add the option of an acoustic tone that's good enough for a lot of live work. It helps that the HBII is pretty resistant to feedback, so it can cover many high gain tones.

I replaced the electronics on my S2 SC594 with a core wiring harness and 58/15 LT TCI pickups and it was a huge improvement. The S versions are fine, even good, but the core electronics are amazing.
